I have the same system but with an ATI card. I am pretty sure there are problems with the 8800 nvidia series cards. You will find some posts in the official tech forum about that.
First thing i wanna suggest you is to run the game in DirectX and not in OpenGL. To be sure, you can run the external configuration utility you can find in the ryzom installation folder and select it.
If you cannot run the external configuration utility, you can edit the file 'client.cfg' and modify the line, or add one if there is not:
Driver3D = "Direct3D";
Only modify the file client.cfg and never modify client_default.cfg
